Vegan Korean Steamed Eggs

We discovered a vegan way to make fast and easy Korean Steamed Eggs! Steamed eggs are called gyeran-jjim in Korea (계란찜). Koreans usually eat this as a side dish with white rice. But I personally love to eat the eggs as an entree. Kind of like how we eat omelettes in the USA.

Traditionally these steamed eggs are cooked in ttukbaegi (뚝배기). Ttukbaegi are earthenware bowls that are also used to make various Korean stews. These days the steamed eggs also are prepared on stove top (with a bowl inside a vessel filled with water). In this recipe, we show you the simplest and fastest method of them all: microwave style.

INGREDIENTS

 
  • 1-2 stalks of scallion (chopped)

  • 1/2 cup JUST Egg

  • 1/4 cup water

  • salt to taste

  • roasted sesame seeds to taste (optional)

  • sesame oil to taste (optional)

Servings: 1-2 servings. Depends on if you eat as side dish or as entree.

About JUST Egg

We bought this bottle of JUST Egg at Sprouts Farmers Market, but it is also sold on Amazon.

Step 1

Combine water and JUST Egg. Whisk.

Add salt to taste and whisk. Keep in mind, there is already sodium in JUST Egg.

Step 2

Pour mixture into microwave-safe dish. Add scallion.

Skip if you don’t like scallion. Maybe add another ingredient like thyme and other herbs.

Step 3

Cook your dish in the microwave for 1 minute. Depending on your microwave, you will need to cook more or less.

We cover our dish with a microwave-safe lid just in case the food explodes.

No lid?

Worried about your egg exploding in the microwave, but don’t have a microwave-safe lid? You might use a wet paper towel. Be sure to gently squeeze excess water before covering your dish.

In consideration of the environment, I recommend having a long-term use lid rather than using paper towels. However it is better to use one sheet to microwave your food than use many sheets to wipe exploded food.

Step 4

Remove dish from microwave and lift lid. Check on the egg’s doneness. Some parts may still be runny. Cook for an additional 1.5 minute.

Once again, the time may vary depending on your microwave.

Tip: To check for doneness, use toothpick, fork or end of a large paper clip to poke the egg. In this case, the batter was obviously runny, so Mommy Oh stirred with chopsticks to spread out the clumpy bits.

Yum time!

Your steamed “eggs” are complete.

Optional: Feel free to add roasted sesame seeds and sesame oil for more flavor. For me, these toppings are a must.

Customize your egg

If you don’t have access to roasted sesame seeds nor sesame oil, how about substituting with other ingredients?

We experimented by using olives, sun-dried tomato and dried oregano. Turned out to be delicious! Will be cooking this version again.

About the other vegan egg

Aside from JUST Egg, we also tried the vegan egg by Follow Your Heart.
