Fast & Easy Korean Steamed Eggs

This week Mommy Oh shows us how to make fast and easy Korean Steamed Eggs. We call them gyeran-jjim in Korea (계란찜). Koreans usually eat this as a side dish, but I love it as an entree.

Traditionally these steamed eggs are cooked in ttukbaegi (뚝배기). Ttukbaegi are earthenware bowls that are also used to make various Korean stews. These days, steamed eggs also are prepared on the stove top (with a bowl inside a pot filled with water). In this recipe, we show you the simplest and fastest method of them all: microwave style.

INGREDIENTS

 
  • 1-2 stalks of scallion (chopped)

  • 2 eggs

  • 1/4 cup water

  • 1/4 teaspoon salt

  • roasted sesame seeds (optional)

  • sesame oil (optional)

Servings: 1-2 servings. Depends on if you eat as side dish or as entree.

Step 1

Put eggs in medium bowl. Whisk.

Note: Two eggs will be about 1/2 cup.

Step 2

Add water and salt. Whisk until fairly smooth.

Note: Use room temperature water, not hot water. We don’t want to cook the eggs yet!

Step 3

Strain egg mixture into microwave-safe dish.

Step 4

Add scallion.

Skip if you don’t like scallion. Maybe add another ingredient like thyme and other herbs.

Step 5

Cook your dish in microwave for 1.5 minute. Depending on your microwave, you will need to cook more or less.

We always cover our dish with a microwave-safe lid just in case the food explodes.

No lid?

Worried about your egg exploding in the microwave, but don’t have a microwave-safe lid? You might use a wet paper towel. Be sure to gently squeeze excess water before covering your dish.

In consideration of the environment, I recommend having a long-term use lid rather than using paper towels. However it is better to use one sheet to microwave your food than use many sheets to wipe exploded food.

Step 6

Remove dish from microwave and lift lid. Check on the egg’s doneness.

If still runny, cook again in microwave for 30 more seconds. Once again, the time may vary depending on your microwave.

Tip: To check for doneness, use toothpick, fork or end of a large paper clip to poke the egg.

Optional

Feel free to add roasted sesame seeds and sesame oil for more flavor. For me, these toppings are a must.

If you don’t have access to roasted sesame seeds nor sesame oil, how about substituting with other ingredients? Feel free to customize and experiment :)
