Vegan Stir Fried Zucchini

Today Mommy Oh shows us how to make Stir Fried Zucchini, an easy Korean side dish that requires only 3 main ingredients. It also happens to be vegan. So that’s another plus :)

Preparation begins the day before cooking. When you cook with freshly cut zucchini, it will become watery and sticky on the pan. Thus why Mommy Oh dries them overnight before cooking. Flavor and texture alter increasingly as the zucchini dries.

INGREDIENTS

 
  • 2 medium-sized zucchini

  • 2 cloves of garlic (or more if you want)

  • 1/3 medium-sized carrot (or more if you want)

  • salt & pepper

As this is a side dish, serving size will vary upon eater :)

Step 1

Slice zucchini about 2 millimeters thick.

Use mandoline slicer if you have one. You can cut with a knife, too. Just make sure the slices are thin enough, so they become flexible when we cook them later on.

Step 2

Put slices on parchment paper. Let them dry overnight at room temperature.

Room temperature is relative depending on the weather. At the time we make this dish, it was about 70°F (21°C).

Placing the zucchini in a sunny area or directly in the sun is best. This will help suck out moisture faster.

If you are concerned with flies or other insects, please cover the zucchini with something breathable like a food tent.

Important: Try not cover the zucchini directly as it may collect moisture and lead to mold.

Step 3

The next day, the slices will have dried. They may be slightly moist and that’s okay! We typically wait at least a solid day.

Step 4

Add in about 1 tablespoon of oil into pan and put on high heat. We use olive oil, but feel free to use your preferred cooking oil.

Step 5

Once pan is heated, bring down to medium heat. Add garlic, zucchini and carrot.

Add in salt and pepper to taste.

Step 6

Cook and stir frequently until zucchini starts to have light brown spots. Be careful not to overcook.

Yum time!

Enjoy with white rice or an entree. I usually top these on my plain veggies (the vegetables act as my rice). Mommy Oh likes to pair the stir-fried zucchini with seafood such as scallop.

Why not get experimental and add it in a grilled cheese sandwich? It’s actually really good :)
