Korean Tuna Tofu Pancakes
Today Mommy Oh shows us how to make Dubu Donggeurangddeng (두부 동그랑땡), which has been one of my favorite snacks during the Covid-19 quarantine. We translate it as Tofu Pancakes or Fritters for easier reference. These Tuna Tofu Pancakes are made of only 4 main ingredients! You can also make an optional dipping sauce. Mommy Oh typically cooks without measuring. Rather than use a cup of onion, she might use 1/4 of a whole onion (depending how big the onion is). For this written recipe, she has provided exact measurements for your reference. You can watch our video for more details or scroll down for the recipe:
INGREDIENTS
For the pancakes:
1/2 block of firm tofu (8 oz)
1 egg
1 can of tuna (drained 3.5 oz)
1/2 cup scallion
pinch of salt & black pepper
Makes 2-3 servings. You can use the other half of tofu block to make Vegetable Tofu Pancakes. Or you can easily double up on ingredients for this recipe and use the whole block of tofu for more tuna pancakes.
About the tofu
Be sure to use firm tofu. The one we used is a 4 out of 6 in firmness (as seen on packaging).
About the canned tuna
Before draining, our can was 4.7 oz. After draining, it was 3.5 oz. A little more or less is fine.
For the dipping sauce:
1 tablespoon soy sauce
1 tablespoon white vinegar (alternative: rice vinegar, apple cider vinegar)
1 teaspoon roasted sesame seeds
optional: dried chili flakes, amount to your liking
Step 1
Clean and cut scallion.
Step 2
Place tofu into cheesecloth. Squeeze out excess water.
Step 3
Remove liquids from canned tuna by squeezing tuna with hands.
Step 4
Combine tofu, tuna and scallion medium bowl. Add in pinch of salt and pepper. Mix.
Add egg and stir until all ingredients in batter are evenly dispersed.
Step 5
Heat medium/large pan with your preferred cooking oil. We used olive oil. Turn down heat for cooking.
Step 6
Get two spoons. Scoop spoonful of mixture with first spoon. With second spoon, neatly round the mixture into a mini pancake/patty.
Then place each pancake onto pan.
Be sure that pan is a little less than medium heat while you are making the shapes, otherwise the first few pancakes may cook too fast and become burnt.
Step 7
Cook both sides of pancakes until they turn golden brown. Or a bit longer, if that’s what you prefer.

Dipping sauce
Combine vinegar, soy sauce, and sesame seeds for extra flavor.
