Korean Tuna Tofu Pancakes
Today Mommy Oh shows us how to make Dubu Donggeurangddeng (두부 동그랑땡), which has been one of my favorite snacks during the Covid-19 quarantine. We translate it as Tofu Pancakes or Fritters for easier reference. These Tuna Tofu Pancakes are made of only 4 main ingredients! You can also make an optional dipping sauce. For the Vegetable Tofu Pancakes, click here.
Mommy Oh typically cooks without measuring. Rather than use a cup of onion, she might use 1/4 of a whole onion (depending how big the onion is). For this written recipe, she has provided exact measurements for your reference. You can watch our video for more details or scroll down for the recipe:
INGREDIENTS
For the pancakes:
1/2 block of firm tofu (8 oz)
1 egg
1 can of tuna (drained 3.5 oz)
1/2 cup scallion
pinch of salt & black pepper
Makes 2-3 servings. You can use the other half of tofu block to make Vegetable Tofu Pancakes. Or you can easily double up on ingredients for this recipe and use the whole block of tofu for more tuna pancakes.
For the dipping sauce:
1 tablespoon soy sauce
1 tablespoon white vinegar (alternative: rice vinegar, apple cider vinegar)
1 teaspoon roasted sesame seeds
optional: dried chili flakes, amount to your liking
